Masale Bhaat with Sohum Goda Masala

Ingredients:
1 cup Basmati Rice / Long Grain Rice
Whole Masala:  2 tsp Coriander seeds, 2 tsp Cumin Seeds, ½ cup Cilantro, 3-4 black Pepper, 
4-5 Dry Red Chilies
6-7 Cashew Nuts
1 ½ tsp Sohum Goda Masala
1 tsp Sugar or Jaggery
2 tsp Oil
¼ tsp Mustard Seeds
¼ tsp Turmeric Powder
Salt to taste
Curry Leaves
Veggies of your choice (carrots, peas, green beans, potato, cauliflower)

Method:

1) Wash Rice and drain water. Keep aside in a strainer for 20 Minutes
2) Put the whole masalas in grinder. Grind to coarse powder.
3) Heat 2 tsp oil+ 1 teaspoon ghee in a pan or kadhai. Add Mustard Seeds, Turmeric Powder, curry leaves, Cashews, veggies and rice, Sauté for 4-5 minutes. While sautéing rice, heat 2 cups of water.
4) Once rice is nicely sautéed, add 2 cups of hot water. Lower the heat. Wait until rice starts boiling. Then dry masala powder and, Sohum Goda Masala, salt to taste, Sugar or Jaggery. Give a nice stir, cover with lid and let Rice cook on medium low heat for ten minute.
5)Before serving, drizzle 1 tsp ghee and sprinkle fresh grated coconut and cilantro.
